Neither a sit on top (SOT) nor a sit inside (SINK) kayak is "best" for fishing in general. One type might be best for you, depending on your style of fishing and your preferences. If you fish saltwater, a SOT would probably be best for you, because they're self-bailing and can't fill with water like a SINK. However, many kayak fishermen prefer a SOT, even in fresh water. I fish only fresh water in my kayaks and prefer a SINK. They tend to feel more stable than a SOT, because you sit below the waterline and your center of gravity is lower. They also tend to be lighter, because a SOT has a totally enclosed deck, which requires more material. Plus, I don't like to get wet when I fish and you're more protected from the water and the weather in a SINK. The bottom line is that you should try both types before you buy one. I'd be willing to let you paddle any of my kayaks and I'm sure some of the other members here would, too. Many of the dedicated kayak shops allow test paddles. Collinsville Canoe and Kayak in Collinsville and Connecticut Outdoors in Oakville are really good shops. Send me a PM, if you'd like to try any of mine.

Thank you for the info and also the very generous offer. We have a rental place in town and I'm going to try a sit on top and see how it feels in my local lake. I stopped by dicks sports and looked at a field and stream eagle talon12 foot sit on top for $549 , it seemed like a good fishing kayak but before I make the plunge I will try paddling one first. Thank you
