Shark Recipes?

Hey all, long time no post since i live in Missouri now...
Anyhow, I came across some fresh shark meat today and couldn't pass it up. The butcher assured me it was Mako which I have eaten before and enjoyed.
Anyone have any recipes? I have 2 shark steaks, both about 1.5 lbs a piece and about 1.5 in thick. I am crafty in the kitchen and decided on 3 different preparations:
1. Grilled, salt, pepper, lemon juice, maybe a little garlic and butter
2. Kebabs, cut into cubes with some veggies, olive oil salt pepper
3. Ceviche - diced thin, chopped red onion, cilantro, lemon and lime juice, maybe some mango
Thoughts? If I do kebabs, im worried the meat may be too flaky but I have never prepared this cut before...
