Which One would be the one to do it?

Tuesday while fishing by Fayerweather jetty, I had a large fish come up for the Skitter Pop I was throwing but couldn't tell from a distance if it was either a keeper striper of a gator blue. The way it came out of the water was like the way dolphins do next to the boats, except for this fish going higher. Are blues or bigger stripers more bound to do that?
