Post your fish recipes

Hey guys/gals I seem to always use the same fish recipe when I cook. I thought a thread on your favorite way to cook fish would be good for the site. Plus it'll give more incentive to get out there on the water. Ken

quick and easy bluefish recipe: start off with 1-2 blufish fillets. generally i have frozen fillets, and i start this process when they are almost thawed. i apply the other ingredients below and put it back in the fridge for a couple hours until completely thawed. set the fish on a large piece of aluminum foil. spread a thin coat of mayo (~1/8") on top sprinkle some Old Bay seasoning on top of the mayo top with sliced onions close up the foil to form a semi-airtight "pouch" (as i mentioned above, if still frozen stick it back in the fridge to finish thawing) preheat your gas grill then set to medium-high, place the pouch on the grill cook for ~20 minutes, open pouch and check to see if the fish is cooked if done, remove and enjoy! --------------- i modified this recipe slightly and cooked some striper last week, and it came out GREAT. instead of mayo and old bay i marinated the filets in a bottled lemon-garlic marinade that was in the fridge. topped with sliced onions and sliced lemons, and cooked it the same way (a little longer as the filets were very thick). this came out FANTASTIC. a great side dish for this which is super easy is to take a bunch of sliced vegetables and cook them the same way in a seperate pouch. last week we used summer squash, zuccini, mushrooms, and onions, with a tablespoon of butter and some salt & pepper. DELICIOUS.
