Pan fried fish fillets

Learned this trick up on the Great Lakes.
Pan fried fish fillets:
Fish fillet (any kind)
Wash/wet fillet thru a dish of Sweet Vermouth (the trick :wink: )
Lightly flour
Dip in favorite batter.
Pan fry in un-salted butter.
Delicious :!: thumbup

I like taking the fish fillets, dipping them in eggwash, then coating them in a breadcrumbs/flour mixture, then frying them in hot oil! :D
