I have not been able to find a good way to prepare carp. Does anyone have any suggestions?

The only type of recipe I know about is the traditional Hungarian soup that they cook mostly during Christmas time, but is something that can be cooked year round.

How does carp taste and what texture meat is it?

I saw this video about filleting and cooking asian carp that was produced by the Missouri Department of Conservation:

The most interesting thing they mention is the taste test they did with 307 people. They put it up against catfish and tilapia, and "an overwhelming majority" chose asian carp as their "favorite".

Thats interesting, I wonder if they are part of the same family of fish, I have eaten swai which I believe is another Asian fish similar to catfish. Are there Asian carp around this area or just grass carp?

The asian carp, grass carp, and common carp are three completely different species of fish. The common carp are the majority of the ones you see caught around here. The grass carp are around here too, but generally stocked for use as aquatic vegetation control. And the asian carp are the invasive species taking over the illinois river and close to getting into the great lakes. Despite the similar names, they're all nothing alike.
